I'm not a fan of Borsch, it's a cabbage and beat soup (usually), but some recipes aren't bad... the ones with meat!
There are many variations and if someone interested I will ask my ancients to share the secrets. There is Regular, Sweet, Green (think spinach instead of beats?) and then everyone makes it their "own" so it might not be same as any of you ever had before. Can be served hot or cold, generally a shot of Vodka is required for better enjoyment, also copious amounts of garlic (especially if Borsch is really bad)
Shashlik is basically a kabob, beef, pork, lamb... even poultry and again everyone likes their special marinating method: vinegar, onions or even yogurt! the key to enjoyment is once again campfire and Vodka!
I will be doing some camping this summer with my Russian brethren in PA (near Bloomsburg) and Catskills (near Binghamton) if someone wants to join let me know. I can't promise this crazy dancing, but there will be plenty of drunk people with guitars all thinking they sing better when they drink.

I guess thats why the Russians won WWII. My Ukrainian great aunt Tekla used to make us borscht when were kids. I seem to remember sour cream in it.

i had it both with and without meat. some with lots of cabbage, some with little cabbage.
it's all good.

I love good borscht! My Mum used to make it, wish I had the recipe
Some day I'll have a bunch of vid screens stuck in the shady spots of my study, and they'll have running loops of excellent vids on them. I'm bookmarking those for just such a day.
